DVD Review - Against All Odds

Mexican Burritos - Submitted by Yanman

Ingredients

8  Ten inch flour tortillas
1  Pound ground beef
1/2 Cup chopped onion
2  Cloves garlic, minced
1  4-ounce can diced green chili peppers, drained
1  to 2 teaspoons chili powder
   Several dashes bottled hot pepper sauce to taste (Optional)
2  Cups shredded lettuce
1  Cup chopped tomatoes
1  Cup shredded sharp cheddar cheese.

Pre-Heat Oven to 350º

For filling, in a large skillet cook meat, onions and garlic until meat is brown and onion is tender. Drain fat. Stir in chili peppers; chili powder; hot pepper sauced, if desired; and 1/4 teaspoon of salt. Heat through.

Wrap tortillas tightly in foil and heat in a 350º oven 10 minutes.

Spoon about 1/3 cup of meat mixture onto each tortilla just below center. If desired, top each with 2 tablespoons chopped tomato and 2 tablespoons of cheese. Fold bottom edge of each tortilla up and over filling, just until filling is covered. Fold opposite sides of each tortilla in, just until they meet. Roll up tortillas from the bottom. Secure with wooden toothpicks if necessary. Arrange on a backing sheet. Bake in a 350º oven for 10 to 12 minutes or until heated completely. Remove toothpicks. Serve topped with tomatoes and cheese. If desired taco sauce, sour cream, and/or guacamole may be served. Feeds 4.
